What you need
2 bundles of organic kale
1 sweet onion
1 cup of dried nut/fruit mix (Free Range Snack Co. Orchard Harvest Trail Mix: papaya, raisins, cranberries, pumpkin seeds, sunflower kernels, almonds, apples, and sunflower oil)
2 organic gala apples (or your fav)
1-2 tbsp organic maple syrup
cracked pepper and a little extra virgin olive oil
1. Dice onion into cubes
2. Dice apples into cubes
3. Heat a large skillet to medium and add EVOO. Throw in the onion and stir readily to avoid burning. Once slightly browned, turn heat down to LOW and add apples.Add pinch of sea salt and pepper to taste.Turn heat back up to medium and add the 1 cup of dried nut mix. If needed, add a small amount of EVOO and more sea salt and pepper. To your desire of sweetness, add maple syrup and stir. Turn down to LOW and cover with lid. Let simmer for 10 minutes
4. Prep the Kale.
- Always clean your produce, no matter organic or not!
- Begin to tear away the leafy Kale away from the spine of the plant
5. Check on the skillet. Taste and see if the apples are to your liking. I enjoy them slightly medium in softness. Add the Kale and 1/2 cup of water to the dish. Cover and let the Kale steam for 10 minutes. Occasionally open lid and stir the ingredients. Add salt and pepper to taste and if you want it super sweet, add more maple syrup.
